About Us
The passion for pizza started over a decade ago in owner Andrea Brunelli’s hometown in Italy, which he has continued to master here in Australia! Established in September 2020, Maestro Sourdough Pizza began during the global pandemic with Andrea making pizzas out of his home kitchen for friends and family.
What started as a few pizzas for his neighbours during the lockdown turned into a thriving business and Maestro needed a bigger place to call home. So Maestro Sourdough Pizza was born. A traditional, contemporary, Neapolitan style pizza shop in North Beach.

Maestro’s speciality is our long rising sourdough pizzas, traditionally Italian, with well-balanced and delicious toppings. Our menu also features a great mix of appetisers, pastas and desserts – something for everyone!
Known not only for our delicious food, but also our friendly atmosphere and exceptional service, Maestro’s offers an authentic Italian pizza experience that will leave you planning your next visit.
the process
At Maestro’s, all our ingredients are either locally sourced or imported directly from Italy, so you know every part of your pizza is packed with flavour, giving you a taste of Italy without having to leave Perth.
Our “contemporary” dough combines points of the procedural guideline for Neapolitan Pizza with the knowledge of the latest kneading techniques. On top of that, high hydration, long fermentation and quick cooking make our pizzas very light and easy to digest! Naturally risen up to 80 hours and cooked at around 480° for 90 seconds, it develops complex flavours and aroma profiles.
